Polly Logan Whisky Maker went to visit Jordi Roca’s famed chocolate factory, Casa Cacao in Girona, and came away with the idea of creating a whisky that would pair beautifully with chocolate. She succeeded magnificently: Damian Allsop, Chocolate Master at Casa Cacao says about Macallan Harmony Collection Fine Cacao, ‘We can taste our chocolate in it. It’s amazing.’ What is fascinating is that the whisky box is made of chocolate paper created from cacao husks. Macallan Harmony Collection Fine Cacao is a Speyside single malt, aged in sherry oak casks - Macallan is the master of exceptional and expensive oak casks which they source, craft and toast. It has flavours of chocolate, fine milk chocolate, butter toffee, chocolate-covered raisins, pear, ginger, fig and marzipan and comes at a strength of 40% ABV. Its colour of toasted cacao beans is driven solely from the casks. This is a sweet, well-balanced and delicious whisky.
